11 Feb Slow Cooker Cuban Sandwiches

Create bright, tasty and easy Cuban Sandwiches using your slow cooker and some pastured Bent Arrow Acres pork.

 

 

On cold winter days, roasts seem like the best way to do dinner. There is something so cozy about a meal cooking low and slow all day long.

A roast is also really easy to do with a freezer full of pork.

We are working our way through the half pig that we raised over the summer and the taste of this pastured pork is unparalleled.  Since filling their own freezers, many of our customers have complimented the pork they purchased from us saying it is the best they have ever had.

While delicious on it’s own, I still like to play with flavors like bright citrus and earthy spice.  Traditionally, slow cooker roast seems like the last place you might find vibrant flavors like these.  Carrots and potatoes are a little more “normal.” But, while I feel like that is great from time to time, it can become a little dull.  And, there are so many ways to bring a pork roast to life.

That’s exactly what we did with some oranges and limes.

Yep.  Oranges and limes… Talk about breaking away from the normal!

The citrus fruit gave the pork a little Caribbean flair and these Cuban sandwiches were a welcome addition to the dinner table.

This winter has been so grey and cold, but the bright flavors felt like sunshine.  We loved how the natural saltiness of the pork is balanced by the fresh acidity and bite from the fruit.

By putting it all together in a sandwich with creamy swiss cheese, briny homemade pickles, and a tangy mustard we had a great dinner and plenty of left over’s for exciting lunches.

Cuban Sandwiches
 
Inspired by Real Simple Magazine
Ingredients
  • 2 pounds pork shoulder, trimmed of excess fat
  • 6 garlic cloves, finely chopped
  • 1 tsp Salt
  • 1 cup chicken stock
  • 1 tsp orange zest
  • 1 tsp orange juice
  • The juice from two limes
  • Sub rolls or hamburger buns
  • Swiss cheese, pickles and Dijon mustard for sandwich toppings
Instructions
  1. Rub the pork with garlic and salt.
  2. Place seasoned pork in a slow cooker. Add the broth, orange zest and orange juice to the slow cooker. Cover and cook for 7-8 hours on low.
  3. Pull the pork apart using a fork creating 1 inch pieces. Toss the pork with lime juice and keep warm in the slow cooker.
  4. To make the sandwiches, preheat the broiler with the oven rack 6 inches from the heat. Spread mustard on the bottom half of the split rolls or buns and top with pork and cheese. Broil until the cheese is melty only 1-2 minutes. Add pickles, top the sandwiches and enjoy!
