30 Jul Back To School Breakfast Burritos

They say breakfast is the most important meal of the day and that couldn't be more true as school starts back up

 

But, school day morning’s are rushed and the thought of a well balanced breakfast remains just that… a thought.

However, with just a little time and a bunch of farm fresh eggs, you can create easy grab and go breakfast for kids– big and small- full of protein and veggies to help get their day started right.

Freezer Breakfast Burritos
 
Ingredients
  • 1 pound ground sausage (Plain, or flavored if preferred.)
  • 1 white onion diced
  • 1 green pepper minced
  • 2 large handfuls of baby spinach
  • 16 eggs, beaten
  • salt and pepper to taste
  • 2 cups shredded cheese
  • 16 burrito sized flour tortillas
  • Materials needed for Freezing:
  • Foil
  • Wax Paper
  • Gallon Zip Lock bags
Instructions
  1. Brown sausage on medium high heat with the onion and pepper.
  2. Add spinach and stir to combine until it wilts.
  3. Beat eggs together in a bowl with salt and pepper. Add to pan.
  4. Stir occasionally until eggs are cooked through.
  5. Let mixture cool for about twenty minutes. During this time prep the sheets of wax paper and foil to make assembly easy. Tear off 16 sheets of foil and wax paper and make a stack of each.
  6. Place tortilla on wax paper, fill with ½ cup of egg and sausage mixture, top with 1-2 tablespoons of cheese.
  7. Wrap each burrito by folding one side over length-wise tightly against the filling. Then fold in the small ends and fold over the last side.
  8. Place each burrito seam side down on the wax paper and wrap.
  9. Wrap each burrito in foil and place in gallon freezer bags.
  10. To Cook:
  11. Remove a burrito from the foil and wax paper.
  12. Wrap in a paper towel and heat in the microwave for 2 minutes.
  13. Eat right away!

Fresh eggs are available everyday at the farm for $4.00 a dozen.  And, they are beautiful!
