Pat the chicken dry and season with salt and pepper.
Place chicken beast side up on a roasting pan and put in the oven. Roast at 450 degrees for 20 minutes.
After 20 minutes, lower the temperature to 375 degrees and roast for 60-90 minutes or until the juices run clear and the internal temperature reaches 165 degrees.
Let stand for 10 minutes before carving.
