Roasted Asparagus
- 1 bunch asparagus
- 1 lemon
- 1 tablespoon olive or grapeseed oil
- Salt and Pepper
- Optional: Herbs like thyme or rosemary; parmesan for topping
- Preheat oven to 375 degrees.
- Wash and dry asparagus, removing the woody stems.
- Place asparagus on baking sheet in a single layer. Run oil over the asparagus. Top with salt, pepper and herbs.
- Slice lemon in half. Squeeze on half of lemon over the asparagus.
- Toss asparagus in hands and then lay again in a single layer.
- Thinly slice the other half of lemon and top the asparagus.
- Roast for 20 minutes tossing with tongs or a spatula halfway.
