Roasted Garlic, Chicken and Spinach Pizza
 
Ingredients
  • 2 heads of garlic
  • 4 tablespoons of olive oil
  • Pizza Dough
  • 8 ounces mozzarella cheese
  • 8 ounces ricotta cheese
  • 1 cup shredded chicken
  • ¼ red onion, thinly sliced
  • 8 ounces frozen spinach or lightly sautéed fresh spinach
  • Crushed Red Pepper Flakes, optional
Instructions

  2. Preheat oven to 400 degrees.
  3. Roast Garlic: Peel away loose layers around the head of garlic. Cut off the top of the head by cutting about ¼ inch from the top to expose the cloves. Drizzle olive oil all over the exposed surface of the garlic head, wrap in aluminum foil and roast for 30-40 minutes. It is done with the center clove is completely soft.
  4. Let the garlic cool slightly and then press the cloves out of their paper gently. Place roasted cloves in a bowl and mash with a fork. Combine with ricotta cheese and set aside.
  5. Roll out the pizza dough to a clean, slightly floured surface to prevent the dough from sticking. Place the dough on a pizza stone or baking sheet.
  6. Spread the ricotta cheese mixture on the pizza dough. Add the chicken, mozzarella cheese, red onion and spinach. Bake for 18-20 minutes or until crust is golden brown. When done, top with crushed red pepper, if desired.
