Sausage, Egg and Cheese Muffins
 
Ingredients
  • Cooking spray
  • 8 eggs
  • ¾ cup milk
  • salt and pepper
  • 4 Sausage patties
  • 4 slices of cheese
  • 4 English muffins
Instructions
  1. Preheat the oven to 375 degrees.
  2. Lightly coat an 8x8 baking dish in cooking spray.
  3. In a medium bowl add the cracked eggs, milk, salt and pepper and whisk until well combined. Add to baking dish. Bake for about 20 minutes or until set. Cut 4 egg discs using a biscuit cutter or the top of a glass.
  4. Cook sausage patties in a large skillet. If cheese is desired and eating right away, melt cheese onto sausage.
  5. Slice the English Muffins and toast if desired.
  6. Assemble sandwiches with sausage, cheese (if it has not already been added), egg. Enjoy right away!
  7. If freezing, take 4 paper towels and slightly dampen them, wringing out any excess water. Wrap each sandwich in a towel and then wax paper. Place in labeled freezer bag and eat within a month.
