Bacon and Parmesan Green Beans
 
Ingredients
  • 2 pounds fresh green beans, ends trimmed
  • ½ pound bacon, diced (we used bacon ends, an option if purchasing a whole pig)
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 3 tablespoons parmesan cheese
  • salt and pepper, to taste
Instructions
  1. Bring a large pot of water to a boil and add the green beans. Cook until tender 5-8 minutes and drain. Immediately put the green beans in an ice bath. (This is called blanching and helps the beans keep their green color.)
  2. In a medium sized skillet cook the bacon until crisp. Remove and drain the fat.
  3. Add the butter and garlic to the skillet and sauté until tender.
  4. Add bacon, green beans, and parmesan cheese to the skillet and cook until heated through. Add salt and pepper to taste and serve right away.
