The easiest way to a delicious lunch!

Egg salad.

Avocado toast.

Two things that often have Claire torn at a cafe when staring a menu, trying to make a decision.

So… why not combine the two?

This avocado eggs salad makes a great lunch or even snack with crackers.

Because of the avocado, you don’t want to hang onto it too long. But, it whips up easy and you can make small batches. Perfect for busy mornings.

Avocado Egg Salad
 
Ingredients
  • 2 avocados
  • 8 eggs, hard boiled and cut into small pieces
  • A handful of dill
  • A handful of parsley
  • Juice of one lemon
  • A pinch of salt
  • A drizzle of olive oil, if desired
Instructions
  1. Note: If you do not know how to hard boil eggs, we have a great tutorial on our Instagram story highlights. Just look for hard boiled eggs.
  2. Mash the avocados until mostly smooth. Mix in the rest of the ingredients. Serve right away or chill and then serve cold.
