04 Feb Easy Stir Fry

We love the bok choy from the local market store! Here is an easy stir fry that makes it a star!

 

One of our favorite places to shop local is the Kokomo Market Store. I love the lunch options, the baked goods, the veggies and I especially love the bagged greens from Brubaker Produce. They do such a fantastic job with their salad mixes and spinach; but, no matter what, I will always pick up some of their bok choy if it’s there.

It is so good. We put it in soups, make it into side dishes and mix it into stir fry’s… like this one!

Stir fry is a classic weeknight meal over here. Sometimes we follow a recipe, sometimes we just throw whatever veggies we have in the fridge in the pan and call it a meal! This recipe keeps it simple with the sauce and really let’s the bon choy shine. We uses jalapeño brats from the farm just uncased and broken into small pieces. It brought a touch of heat to really make this dish fun.

Quick Pork and Bok Choy Stir Fry
 
Ingredients
  • Sauce:
  • ⅓ cup soy sauce
  • 1 tablespoon of honey
  • 1 tablespoon cornstarch
  • 1 pinch red pepper flakes (optional, but recommended if you like heat!
  • Stir Fry:
  • 1 pound ground pork or pork sausage broken into small pieces
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger minced
  • 3 medium heads of bok choy, sliced
  • Sesame seeds for topping, optional
Instructions
  1. Prepare the sauce by adding all the ingredients to a bowl and whisk together.
  2. Cook the pork or sausage all the way though in a wok pan or large skillet. Remove meat from pan and set aside.
  3. Add a small amount of olive oil or sesame oil to the pan and add the onion, ginger and garlic. Cook over medium heat until fragrant. Add the bok choy and sauce. Cook until the bok choy is slightly wilted and the sauce begins to thicken. Add the sausage or pork back to the pan to coat. Serve right away topped with sesame seeds.
